I found a perfect a setting in our espresso machine for the best tasting coffee. Can this be intellectual property to protect ?

I doubt very much you can patent, copyright or make it a secret formula.

In order to get a copyright on something it has to be something that one wouldn’t generally think about or stumble across. You’d actually have to change the machine mechanically in some way and get a patent on that.
What you’re proposing is like trying to copyright a recipe, and you just can’t do that.
Unlikely, you can’t patent a setting. You can patent the coffee machine and the method of use, if it hasn’t been done already. However, you can’t copyright a setting either, because copyright only applies to an expression of something, created by the right holder, for example, you write a book, and you get a copyright of the book and any case a setting on a coffee machine wouldn’t be considered as inventive as it would obvious as its a matter of experimentation.
