Hazelnut Cappuccino Biscotti Ingredients DRY 2 Cups flour 1 Cup sugar ½ tsp Baking soda 1/ tsp Baking powder ½ tsp Salt ½ tsp Cinnamon WET 2 Egg yolks 2 oz. Cold Milk 2 oz. Espresso ½ tsp vanilla extract OTHER 1 Cup Hazelnuts (toasted and chopped) ½ Cup chocolate chips Dough Combine dry ingredients in a large missing bowl In a small bowl combine espresso and milk Add egg yolks and vanilla extract and whisk together Combine wet and dry ingredients together with the butter to make dough Mix hazelnuts and chocolate chips into dough Bake Form dough into 2 equal balls and shape into logs Bake logs on parchment paper for 35 minutes at 350 degrees Allow logs to cool Cut log into one inch cookies Bake cookies again at 300 degrees for 10 minutes (5 minutes on each side)

Sunday mornings in winter the Junior Grendels always demand their due – a hot chocolate or cappuccino. This is not much of a chore and although I got the camera angles all wrong you can basically see how the Sunbeam 6910 manages a creditable ristretto and a smooth (although quite slow) job on the milk texturing. On average it takes around 4 minutes to make one coffee – and around 6 minutes to make 2 or 3 coffees – the milk steaming is the bottleneck in the production line as always!
